Cream of Vegetable Soup is a perfect winter warmer. This Soup has been made with the vegetables available in my refrigerator. The creaminess of this soup will make it popular among kids also.
Yield: 4 ServingsApprox. Time: 20-30 minutes
Ingredients:
1 tbspn Butter
1 tbspn Oil
1/2 tspn finely chopped Garlic
1/2 cup finely chopped French Beans
1/2 cup finely chopped Carrot
1/4 cup finely chopped Capsicum
2-3 tbspns All purpose flour (Maida)
1 & 1/2 to 2 cups Water
Salt to taste
1 & 1/2 to 2 cups Milk
1 tspn Mixed Herbs
1/2 tspn White Pepper Powder
3-4 tbspns Fresh Cream
Heat butter and oil in a pan. Then add the chopped garlic and saute it for a minute. Then add chopped French Beans and saute it for two minutes. Then add the chopped Carrot and saute it for two minutes. Add Capsicum at the end and saute the vegetables for a minute. Then add the All Purpose Flour to the vegetables and saute it for a minute. Then add the Water and stir the mixture vigourously to ensure that no lumps are formed in the mixture. Cook the mixture for a minute and then add Salt to it. Then add milk and cook it for two to three minutes. Then add the Mixed Herbs and White Pepper Powder and simmer. Finish it by adding fresh Cream to the Soup. Serve hot with Garlic Bread.
Notes:
You may add vegetables of your choice like Caulifower, Corn, Green Peas etc.
You may also add grated Cheese to make it more rich.
The All purpose flour or Maida may be substituted with Wheat flour, but it may change the colour of the Soup.
You may skip fresh cream and use low fat Butter and low fat Milk to make a healthier version of this Soup.
