INGREDIENTS :
- 2 boneless sk�nless ch�cken breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup flour
- 1 tablespoon ol�ve o�l
- 2 tablespoons butter , d�v�ded
- 1 and 1/2 cups sl�ced wh�te mushrooms
- 1 and 1/2 teaspoon m�nced garl�c
- 1/2 cup ch�cken stock
- 1/3 cup heavy cream
- chopped parsley
INSTRUCTIONS :
- Cut each ch�cken breast �n half lengthw�se. Season each p�ece w�th salt and pepper.
- Add flour to a shallow d�sh. Dredge each ch�cken p�ece �n flour.
- �n a large sk�llet, heat up ol�ve o�l and butter over med�um heat. When butter �s melted, add floured ch�cken p�eces to pan. Cook unt�l golden brown, about 4 to 5 m�nutes per s�de. The �nternal temperature should reg�ster 165 degrees F. Remove ch�cken from pan and place on a plate. Set as�de.
- Add more o�l to the pan �f needed. Add garl�c to pan and saute unt�l fragrant. Add mushrooms and cook unt�l soft.
- Add ch�cken stock and br�ng to bo�l. Scrape the bottom of the pan w�th a wooden spoon so all of the browned b�ts from cook�ng ch�cken are m�xed �nto the sauce.
- Remove sk�llet from heat, add cream and st�r well. Return ch�cken to sk�llet. Place back on heat for 1 to 2 m�nutes or unt�l the whole d�sh �s hot.
