Vegan Orange Cardamom Spelt Bread Rolls (Dairy-free, Egg-free, & Refined sugar-free)

A slightly sweet, aromatic bread (sweetened with maple syrup and erythritol) flavored with the unique scent of cardamom and orange peel for the New Year or for a mid afternoon snack or lunch-box treat. You can bake this braided or in a cake pan. For a more traditional cardamom bread, use walnut instead of the raisin filling.


DoughFilling

  • 4 g Dried yeast
  • 200 ml Coconut milk, warmed
  • 1 tbsp Maple syrup
  • 100 g Whole spelt flour
  • 200 g Spelt bread flour
  • 1 tsp Cardamom powder
  • 1/3 tsp Fine sea salt
  • 2 tsp Finely grated orange rind
  • 75 g Coconut oil, melted
  • 1 tbsp Hemp seeds, for topping, optional
  • White chocolate, melted for topping, optional

  • 150 g Raisins
  • 100 ml Freshly squeezed orange juice
  • 1 1/2 tsp Cardamom powder
  • 1/2 tsp Cinnamon powder
  • 3 tbsp Erythritol granules


  1. The night before preparing the rolls, soak raisins in orange juice or rum in your refrigerator.
  2. Whisk the dried yeast, coconut milk and maple syrup in a jug. Set aside for 10 minutes or until frothy.
  3. Combine the flours, cardamom powder and salt in the mixing bowl of your stand mixer fitted with a dough hook. Make a well in centre. Add the yeast mixture, melted coconut oil, and orange rind. Stir at low speed until the ingredients roughly combined, about 3 minutes. Increase speed to medium, and knead the dough until smooth and elastic, about 5 minutes.
  4. Place in a greased bowl and cover with plastic wrap. Set aside to let rise for 60-90 minutes or until doubled in size. Punch the dough down and let rest 10 minutes.
  5. Combine cardamom, cinnamon and erythritol granules in a small bowl. Drain the soaked raisins and reserve 1 tablespoon of the soaking liquid.
  6. Roll the dough out to approximately a 36cm x 24cm rectangle. Sprinkle the rectangle with the spice mixture and raisins.
  7. Roll up, starting at the long side, and pinch edges firmly to seal. Cut the roll into 8 slices. Place the slices, cut side down, in a 26-cm round pan lined with parchment paper. Let rise in warm place until doubled in size, about an hour.
  8. Preheat oven to 190C/375F. Brush the top with reserved soaking liquid and sprinkle the hemp seeds over. Bake for 25 minutes or until light golden brown. Drizzle the melted white chocolate over warm rolls. Enjoy!

Refined Sugar Free Spelt Banana Loaf with Streusel

Use the natural sweetness of very ripe bananas to sweeten this delicious banana bread. It's perfect for those who are avoiding refined sugar. The thick streusel topping, lightly sweetened with coconut sugar, is an integral part of the banana bread, and provides a flavourful crunchy texture, so don't skip it.


Streusel ToppingBatter

  • 150 g Whole spelt flour
  • 80 g Coconut sugar
  • Pinch of salt
  • 1 tsp Vanilla extract
  • 100 g Cold butter, diced

  • 2 Very ripe large bananas, mashed
  • 2 tbsp Pumpkin seed oil
  • 190 g 3.5% Plain yoghurt
  • 2 Eggs, medium
  • 1 tsp Vanilla extract
  • 150 g Whole spelt flour
  • 100 g Almond flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Cinnamon powder
  • 1/4 tsp Nutmeg powder
  • Pinch of salt
  • 100 g Raisins or chocolate chips


  1. Combine flour, coconut sugar, and pinch of salt in a bowl. Add in vanilla and butter. Use your fingertips to rub the butter into the flour mixture until the mixture resembles coarse crumbs. Store in the fridge until ready for use.
  2. Preheat oven to 190C/375F. Lightly grease a 30-cm loaf pan and line with baking paper.
  3. In a mixing bowl, mash the bananas and add in pumpkin seed oil, yoghurt, eggs and vanilla extract. Stir to combine. Sift in spelt flour, almond flour, baking powder, baking soda, spices and salt. Stir to combine. Fold in raisins or chocolate chips.
  4. Spoon the batter into the prepared pan. Sprinkle the surface with prepared streusel. Bake for about an hour or until a skewer inserted in centre of bread comes out clean. Stand in pan for 10 minutes. Turn out onto a wire rack top-side up to cool completely.

Onion Jam Spelt Bread Rolls

These chewy yet soft golden dinner rolls are filled with a homemade onion walnut jam. They smell incredibly delicious and make the perfect accompaniment to a bowl of steaming hot soup or a hearty stew on a cold winter day.



  • 7 g Dried yeast
  • 2 tsp Coconut sugar
  • 160 ml Buttermilk (or water), lukewarm
  • 200 g Spelt bread flour
  • 100 g Whole spelt flour
  • 1/3 tsp Sea salt
  • 2 tbsp Olive oil
  • 180 g Onion jam, homemade or storebought
  • 1 Egg, lightly beaten


  1. Place yeast, sugar and warm buttermilk or water in a jug. Set aside in a warm place for 10 minutes or until frothy.
  2. Add bread and whole spelt flour into a large mixing bowl. Stir in salt, yeast mixture and olive oil. Mix to form a soft dough. Turn out onto a lightly floured surface. Knead dough for 10 to 15 minutes or until smooth and elastic.
  3. Place in a large, lightly greased bowl. Cover with a damp kitchen towel and set aside in a warm place for 1 hour or until doubled in size.
  4. Using your fist, punch dough down. Turn onto a lightly floured surface and knead for 2 minutes or until smooth. Divide dough into 6 even portions. Roll each portion into a ball. Place on lightly floured oven tray. Set aside for 10 minutes to rise.
  5. Meanwhile preheat the oven to 200C/400F. Grease one maxi muffin tray well with olive oil.
    Roll each portion of dough into an oval. Slice the dough 6 times all the way to the center of the dough. So you have 6 strips at the bottom. Place 30 grams of onion jam on upper side of the dough, then roll up to seal the filling. Coil the length of dough roll into a snail shape and place in the prepared muffin tray. Repeat with the remaining dough portions.
  6. Cover with lightly greased plastic wrap. Set aside in a warm place for 30 to 40 minutes or until dough has almost doubled in size. Brush the top with egg. Bake for about 20 minutes. Turn rolls onto a wire rack to cool. Serve at room temperature.

Spelt Flower Bread

Three layers of almond chocolate spread sandwiched between soft sweet spelt bread and twisted into a flower shape, this spelt bread is amazing both for its appearance and its taste. It's not at all difficult to make and perfect to bring to a garden tea party or an afternoon snack.



  • 365 g Refined spelt flour (or 330 g Whole spelt flour+1 tbsp Kaniwa seeds)
  • 30 g Raw sugar
  • 18 g Fresh yeast, crumbled
  • Pinch of salt
  • 30 g Butter, melted and cooled slightly
  • 175 ml Full fat milk, lukewarm
  • 2 Egg yolks
  • 150 g Almond chocolate spread
  • 30 g Butter, room-temperature and cut into small pieces
  • 1 tbsp Almonds, chopped
  • Egg white for glaze


  1. Whisk the lukewarm milk, raw sugar and fresh yeast in a jug. Place the refined spelt flours (or whole spelt flour and kaniwa seeds) and salt in a large bowl. Make a well in the centre. Add the yeast mixture and egg yolks. Stir until a soft dough forms.
  2. Turn onto a lightly floured surface and knead for 5 minutes or until smooth. Knead in butter pieces until dough is smooth and elastic. Place in a clean bowl. Cover with plastic wrap. Set aside in a warm draught-free place to prove for 1 hour or until dough doubles in size.
  3. Punch down the dough and knead shortly on a lightly floured surface. Divide the dough into 4 even portions. Roll out each portion of dough into a round, about 25-cm/10-inch.
  4. Place the almond chocolate spread into a small bowl and warm it in the microwave for about 30 seconds to make it easier to spread onto the dough.
  5. Place a disc of dough on a piece of baking paper and spread 1/3 of almond chocolate spread over. Top with another disc of dough and spread another third of almond chocolate spread and repeat one more time. Now cover with the last disc of dough. Transfer it to a baking sheet or a springform pan.
  6. Take a small drinking glass and place that in the centre of the dough as a guide. Use a sharp knife and cut the dough into 12 or 16 wedges. Take each section of dough and twist. You can leave them as they are or pinch two sections of twisted dough together.
  7. Now cover the dough with a kitchen towel and leave for 30-40 minutes to allow the dough to rise. Preheat oven to 180C/350F. Once the bread had risen, brush the surface with egg white and sprinkle the center of the dough with the chopped almonds. Bake the bread for 20-25 minutes until nicely golden brown.

Seedy Bread Rolls with Broccoli Sprouts

  • 200 g Full fat Quark (German fresh cheese)
  • 2 Eggs
  • 40 g Psyllium husks
  • 50 g Flaxseed, ground
  • 15 g Chia seeds
  • 30 g Sunflower seeds
  • 10 g Baking powder
  • 1 tsp Sea salt
  • A big handful of broccoli sprouts


  1. In a mixing bowl, mix together Quark and eggs until combined. Add in psyllium husks, ground flaxseeds, chia, sunflower seeds, baking powder and salt.
  2. Use a hand-held mixer fitted with dough hooks to beat everything until a thick dough forms and well combined. Add in broccoli sprouts and mix briefly. Cover and set aside for 15 minutes.
  3. Preheat the oven to 180C/350F. Divide the dough into 4 even portions. With wet hands shape each portion into a ball and place on a parchment-lined baking tray. Take a serrated knife and carefully slash buns with a cross.
  4. Bake the buns in the middle of hot oven for about 30 minutes until golden brown. Remove and cool on a wire rack.

Mango Curd Bread

A lightly sweetened yeast bread filled with homemade mango curd. Perfect to go with a cup of tea for a satisfying and delicious breakfast. Mango curd filling can be replaced with lemon curd or vanilla custard. If you fancy a richer bread roll, use cinnamon roll dough instead.



  • 300 g Refined spelt flour
  • 5 g Dried yeast
  • 40 g Raw sugar
  • 1/2 tsp Salt
  • 180 ml Milk, 35C/95F
  • 35 g Butter, softened
  • 120 g Mango curd
  • 1/2 Egg, for glaze

  1. Combine flour, dried yeast, raw sugar, salt, warm milk, and butter in the bowl of a stand mixer. Attach the dough hook and turn the mixer on to the lowest speed and mix until flour is incorporated, scraping down the sides of the bowl as necessary. Increase speed to medium and knead for 5 minutes until soft and elastic.
  2. Transfer the dough to a lightly greased bowl and cover with a towel or plastic wrap. Let rise in a warm, draft-free place until doubled in size, about an hour.
  3. Grease a 6-cavity jumbo muffin tin with butter. Remove the towel or plastic wrap and gently punch down the dough. Divide the dough into 6 portions. Shape each into a ball. Cover with the damp cloth for 10 minutes.
  4. Flatten each ball and roll into a disc. Place 20 grams of mango curd in the middle of the disc. Pinch the seams to seal. Place it in the muffin cup. Repeat with the rest of dough balls.
  5. Cover with a towel or plastic wrap and let rise for 45 minutes at room temperature. Preheat oven to 190C/375F. Brush the tops with bread with egg. Bake the bread for 20 to 22 minutes or until golden brown and cooked through.

Einkorn Aronia Buns with Coconut Filling

Nothing is better than fresh homemade bread! These sweet, soft bread buns with a buttery coconut filling are so yummy that I can't stop eating them. The dough, made with a mix of einkorn and wheat flour, aronia powder and coconut milk, is tender, soft and full of flavour. You can replace aronia powder with green tea, beet or moringa powder.


Coconut FillingDough

  • 50 g Unsalted butter, softened
  • 50 g Raw sugar
  • 1 Egg, at room-temperature
  • 100 g Desiccated coconut
  • 50 g Coconut milk, at room-temperature

  • 180 ml Coconut milk, lukewarm
  • 1 Large egg
  • 40 g Raw sugar
  • 170 g Einkorn flour
  • 100 g Bread flour
  • 1 tbsp Aronia powder
  • 5 g Dried yeast
  • 1/3 tsp Sea salt

  1. Cream butter and raw sugar until fluffy. Beat in egg until combined. Add in desiccated coconut. Stir to combine. Add in coconut milk until well incorporated. Cover with a plastic wrap and set aside until ready for use.
    In the bowl of your stand mixer attached with a dough hook, add coconut milk, egg, raw sugar, einkorn, bread flour, yeast and salt. Mix everything at slow speed just until flour is moistened. Turn speed to medium. Knead the dough until it is smooth and gathering in the center, about 8 minutes.
  2. Shape the dough into a ball. Grease the mixing bowl with a little bit of oil. Return the dough to the bowl. Cover the bowl with a kitchen towel and set it on a warm place for an hour or until doubled in size. Grease a 26-cm springform pan with butter.
  3. Divide the dough into 8 equal portions. Lightly dust the work area with flour and roll each portion into a rectangle that is about 5mm thick.
  4. Spread 1/8 of the coconut filling on the dough, leaving about 1cm border on sides. Roll the log tightly and pinch the seams and the ends to seal.
  5. Position the log with the seam side down. Using a knife, start to slice each log vertically leaving about 1/4 inch on one end uncut. Rotate the two split logs so that the cut sides are facing up. Gently twist the two cut logs together in a spiral manner, as if braiding. Form a coil and tuck the end under it. Place into the springform pan

  6. Preheat oven to 180C/350F. Brush the surface of the rolls with the egg wash. Bake for 20-25 minutes or until rolls are golden brown.
