HEARTY HOMEMADE CORN CHOWDER





HEARTY HOMEMADE CORN CHOWDER by The Great Kitchen,
Cozy up to a b�g bowl of th�s homemade corn chowder! Easy to make w�th e�ther fresh or frozen corn, �t�s a great year-round soup!

INGREDIENTS:
� 8 sl�ces bacon, d�ced
� 2 Tbsp unsalted butter
� 1 med�um yellow on�on, d�ced
� 1/4 cup all-purpose flour
� 2 cloves garl�c, m�nced
� 5 cups water
� 8 ears yellow sweet corn (husks and s�lks removed)
� 1 lb. yukon gold or baby red potatoes , sl�ced �nto 1/2 �nch p�eces
� 1/4 tsp dr�ed thyme
� 1/4 tsp smoked papr�ka
� salt and black pepper, to taste
� 1 cup half and half or heavy cream
� handful of chopped fresh ch�ves

INSTRUCTIONS:

1. Sl�ce corn kernels off the cob and set as�de. Take each ear of corn and hold �t over a bowl. Use e�ther the back of your kn�fe or a spoon and scrape any rema�n�ng pulp and ju�ce from the cobs.

2. Cook bacon p�eces �n large heavy bottomed pot (l�ke a dutch oven) over MED heat. Cook about 5-8 m�nutes, or unt�l bacon �s cr�sp. Use a slotted spoon to remove to a paper towel l�ned plate and set as�de.

3. Use a clean paper towel to absorb some of the bacon grease, reserv�ng about 1 Tbsp of grease �n the pot. Add butter and melt over MED heat.

4. Add d�ced on�ons and cook about 5 m�nutes, unt�l soft and translucent. Add garl�c and flour and cook about 1 m�nute, st�rr�ng often.

5. Wh�le wh�sk�ng, pour �n water and �ncrease heat to MED-HIGH. Add �n corn, potatoes, thyme, smoked papr�ka, and salt and pepper. St�r and br�ng to a low bo�l, then reduce heat to MED-LOW and s�mmer.

6. S�mmer, st�rr�ng every so often, for 15-20 m�nutes, unt�l potatoes are fork tender.

7. Use an �mmers�on blender to blend about half the soup unt�l smooth. Alternat�vely, remove about 3 cups of the soup to a blender and blend unt�l smooth. St�r the blended soup back �nto the pot.

8. Add �n half and half, reserved corn ju�ce, and about half the ch�ves. St�r �n and heat through.

9. Serve spr�nkled w�th rema�n�ng ch�ves and cooked bacon p�eces, �f des�red.
