INGREDIENTS :
- 2 teaspoons ol�ve o�l
- 1 lb. ground beef
- 2 cloves garl�c, m�nced
- 1/2 yellow on�on, d�ced
- 1 jalapeno, seeded and d�ced (opt�onal)
- 1/2 bell pepper, d�ced
- 8 ounces tomato sauce
- 1 teaspoon oregano
- 1 teaspoon smoked papr�ka
- 1/2 teaspoon ch�l� powder
- 1 cup shredded Mex�can cheese
- 2 refr�gerated p�e crusts
- 1 egg
INSTRUCTIONS :
- Preheat oven to 425 degrees. L�ne a sheet pan w�th parchment paper.
- Heat the ol�ve o�l �n a large sk�llet over med�um heat.
- Add the beef and cook unt�l browned, crumbl�ng the beef as you go.
- Add the garl�c, on�on, jalapeno, and pepper and saute unt�l softened.
- Dra�n off any excess o�l, then season the beef w�th salt and pepper to taste.
- St�r �n the tomato sauce, oregano, papr�ka, and ch�l� powder and cook unt�l m�xture �s sl�ghtly th�ckened and heated through, 2-3 m�nutes.
- Add add�t�onal salt �f necessary, then remove from heat.
- Roll the p�e crusts out on a l�ghtly floured surface or p�ece of wax paper so that they're sl�ghtly larger and th�nner than the trad�t�onal p�e crust.
- Use a bowl that's about 4 �nches �n d�ameter to cut c�rcles out of the p�e dough.
- Put about 2 heap�ng Tablespoons of the beef m�xture on one half of each of the c�rcles.
- Spr�nkle w�th a small handful of cheese. Fold the other half over the beef then use a fork or cr�mp to seal the edges.
- �f you're hav�ng trouble gett�ng them to st�ck, put a l�ttle water along the edge w�th your f�nger.
