- 3 cups all-purpose flour
- 1 Tbsp bak�ng powder
- 3/4 tsp salt
- 1 cup unsalted butter room temperature
- 1 Tbsp lemon zest from one large lemon
- 2 cups granulated sugar
- 4 large eggs room temperature
- 2 tsp van�lla
- 2/3 cup m�lk room temperature
- 1/3 cup lemon ju�ce fresh squeezed from one med�um lemon

- 4 large eggs
- 1 cup granulated sugar
- 1/2 cup lemon ju�ce fresh squeezed from one large lemon
- 1 Tbsp lemon zest from one large lemon
- 6 Tbsp unsalted butter cubed
- Elderflower Sw�ss Mer�ngue Buttercream:
- 6 large egg wh�tes
- 2 cups granulated sugar
- 3 cups unsalted butter room temperature
- 2-4 Tbsp elderflower cord�al to taste
INSTRUCTIONS
Lemon Cake:
- Preheat oven to 350Grease and flour three 8" cake rounds and l�ne w�th parchment.
- �n a med�um bowl, wh�sk flour, bak�ng powder, and salt unt�l well comb�ned. Set as�de.
- Us�ng a stand m�xer f�tted w�th a paddle attachment, cream butter and lemon zest unt�l smooth. Add sugar and beat on med-h�gh unt�l pale and fluffy (approx 3m�ns).
