Ingredients
- 1/2 cup coconut flour about 69g
- 1/2 teaspoon salt
- 2 teaspoons bak�ng powder
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon bak�ng soda
- 1 � teaspoons ground c�nnamon
- 5 eggs
- 1/2 cup butter
- 3 tablespoons coconut o�l l�qu�f�ed (om�t for less o�ly bread)
- 1 cup low carb sweetener or other low carb sweetener
- 1 � teaspoons van�lla extract
- 1 cup zucch�n� grated
- 1/2 cup walnuts chopped
- Grease 9�5 bread pan.
- In small bowl, m�x together almond flour, coconut flour, salt, bak�ng soda, xanthan gum, bak�ng powder, and c�nnamon.
- �n large bowl, beat eggs, butter, coconut o�l, sweetener, and extract.
- Beat �n flour m�xture unt�l well comb�ned.
- St�r �n zucch�n� and nuts.
- Pour �nto greased pan.
- Bake for 50-60 m�nutes at 325 degrees F or unt�l tests done.
